Pumpkin Spice Latte

I’m trying to gather all my favorite recipes from the old place and put them over here slowly. This is absolutely one of my favorite things to have in the fall. Some weekends I’m not able to get out of bed at the crack of dawn and race to Starbucks. So this morning, I sat at my picnic table and had this in the quiet of the morning.  It hit the spot.

Ingredients:

 2 cups Milk (your Choice – Skim, 1%, 2%, Whole, Soy, Etc.)
 2 Tablespoons Canned Pumpkin Puree
 1 Tablespoon Sugar Or Sugar Substitute (I used 1 1/2)
 2 Tablespoons Vanilla Extract
 ½ teaspoons Pumpkin Pie Spice
 ¼ cups Espresso (1-2 Shots) OR 2/3 Cup Very Strong Coffee

Preparation Instructions:

In a saucepan, combine milk, pumpkin and sugar and cook on medium heat, stirring, until steaming. Remove from heat, stir in vanilla and spice, transfer to a blender and process for 15 seconds until foamy. If you don’t have a blender, don’t worry about it. Just whisk the mixture really well with a wire whisk. (or you can use the magic bullet…I have frothy coffee thanks to this baby every single morning!!! )
Pour into a large mug or two mugs. Add the espresso on top.
Optional: Top with whipped cream and sprinkle pumpkin pie spice, nutmeg, or cinnamon on top.
