We eat quite a bit of jicama around here. We serve it often to guests. Many ask what it is and end up loving it. It’s probably one of our favorite foods.
We tried it a different way this time around. To give it a little pop I squeezed half of a tangerine (I think any citrus will do!) of over slices of jicama. Then I grated a small piece of ginger. And to top it off I grated a bit of nutmeg.
To step it up one more notch I put it all on top a bed of spinach with a few berries and then squeezed the other half of the tangerine over it all. No dressing. I was a perfect lunch. Quick and easy. Super nutritious.
I can’t wait to try this! Not really a fan of nutmeg but the rest sounds really good. (And Josh is a spinach fanatic so he’ll be excited to try it too!)
