I learned how to make two things in high school.
Rhubarb Cobbler was one of them.
And to this day, it’s still one of the easiest summer recipes that I use over and over. And you can change up the berries and fruit. And also, everyone, for the most part, loves it. I have bocce on Monday nights and everyone takes a little something to snack on while we’re there. And a bottle of wine. I’ve made this two weeks in a row (we rotate houses, and I didn’t get a picture the first time around, so sorry for those who had it twice!)
Ingredients:
2-3 Cups chopped rhubarb (not an exact science, I was just using what I had)
1 small basket/crate of strawberries (sliced)
1 cup sugar
1 stick of butter
1 box of yellow cake mix
Directions:
In a rectangle baking dish (size is not super import) mix the rhubarb and strawberries and cup of sugar, and throw into the bottom of the dish. In a separate bowl, melt the stick of butter. Add the yellow cake mix and stir a bit until its crumbly. Layer it on top of the fruit. Bake at 350 for 30 minutes or until golden on top.
You can eat this by itself or with ice cream. Super easy and fast.
