Halibut Chowder

 

So when I asked the Dino Dude what we should eat while we have company from the North Country, his response was “Well, you know, things like bear, and moose and maybe some fish….we should really try to make him feel like he’s at home mom.”

So that’s what I did.

While visiting Alaska this past summer, I got a recipe that I never ever in my wildest dreams thought I would like, from my husband’s aunt.  I’m kind of a baked fish eater. I don’t put it in other foods. Seems wrong to me. But…let me tell you, it is FAN.TAST.IC. I loved it.  It’s very rich, so it’s not something that is in my weekly routine or anything, but it sure is good to share with your family when they are visiting!

 

AK Halibut Chowder

 

4 ounces of diced, crisp bacon

1 large onion, diced

6 cups of chicken broth

4 potatoes peeled and diced (or red ones with the skin as they add color)

1 cup diced celery

1 pound of halibut, rock fish or whatever white fish meat you have on hand

2 tbls of flour

½ tsp sugar

3 tbls of water

2 ½ cups of half and half or whole whipping cream

Small bag of frozen corn

Hot Tabasco Sauce

Salt and pepper to taste

Throw everything but the halibut into a crockpot on low for the day and 10 minutes before it’s ready to serve, I toss in halibut and the bacon…..of which you can never have enough! Season with Tabasco as much as your little heart desires. SO GOOD.

I also think this recipe would be good with just about anything thrown in there… shrimp, ect.
