Pumpkin CheeseCake With Gingersnap Crust

So, I’m not sure if you noticed, but it’s been pumpkin mania here.  It’s pumpkin season, and pumpkins are everywhere. Are you getting tired of them? Are you tired of the pumpkin overload? Well, I’m trying to find the best of the best. Mixing it up and changing things here and there (I normally change something about the recipes, as I always find at least one thing that needs it, I’m just that kind of girl.)  I promise I only have one more pumpkin recipe to go and then I think I will be pumpkined out for a little while. I will move on. It’s time.  I found this one while looking around. I love the way recipes are shared in this day in age. You can find anything and everything.  I didn’t change anything about this one and I found it here. Gotta give credit where credit is due. It’s very good. It’s also very rich, so one piece is good. I don’t eat cheesecake that often, it’s not my go to dessert, but I sure do love it once in a while. Especially with gingersnaps. mmm, gingersnaps.
