It’s setting in. Cabin fever. I know I have a long way to go here in Wyoming on the plains, but after Christmas and Birthdays…. I’m ready for it to be over. To help me with it though, I start incorporating more fresh fruit into my baking. I eat a TON of fruit every day, but I don’t cook with it. I had some strawberries that were about to go bad in my fridge, so I decided I needed to make them into muffins. These, I have to say are so good the next day and the day after if they have been stored properly and covered. They get softer and yummier. They would be a great thing to make on Valentines Day morning or the night before. The original recipe called for just milk, but I didn’t have any, so again, I just threw in what I had in the fridge, which was almond milk and a little bit of creamer.
