I’ve seen soooo many recipes for stuffed peppers. Most of them are stuffed with ground beef.
I don’t really eat ground beef.
So I decided to make a recipe up with shredded chicken instead. And since I love enchiladas soooo much, I kind of wanted to make a pepper enchilada. Cut out the bread part since my whole family pretty much loves peppers. I wanted to learn how to make the sauce, and I will have to say, I will probably never buy it again. This stuff is the bomb!! LOVED it sooo much. You will definitely have to try it. Keep in mind, I hardly ever actually measure spices in my food. I kind of just throw it in, so the ingredients listed are just guidelines. You can put it more or less. I found the tajin spice at King Soopers, and it’s a lime flavored spice. These are fantastic for summer time, as you can cook it them on the grill. If your grill has a burner you can make the sauce out there as well!
