Can we taco about food for a minute?
It was bitterly cold this past weekend. And my plans for outside wandering were nixed but the big little Dino Dude.
SO….When all else fails. And it’s too damn cold to go outside. Cook.
That’s what we did.
It was probably the most unproductive day I’ve had in months. And I don’t feel one bit bad.
But these. OH these……..were amazing. And fresh. And made me want to eat all the fresh things in the whole wide world. Because there is nothing better than fresh tasting food.
I promised I would write this one down. So my little big guy can make them himself (He likes to make something more complicated than ramen noodles at times and these were sooooo easy)
The sauce is pretty sweet, so if wanted to make it a little tangier, add more lime juice. Also… if you have wild hair add some queso fresco cheese crumbled all over it.
To put these together you’ll need:
Mango Salsa
1 mango chopped
1/2 bunch of cilantro chopped
1 red bell pepper chopped
1 small bunch of green onions chopped
1/2 cup red cabbage chopped
The juice of a lime
Salt and pepper to taste
Mix all together (you can also add a chopped jalapeño for heat)
For the Shrimp
1 pound shrimp (1 bag of medium frozen shrimp works just fine!)
2 tablespoons butter
2 teaspoons chili powder
salt and pepper
Melt the butter over medium heat, add shrimp chili powder and salt and pepper. Cook about 7 minutes, until shrimp are pink.
For the sauce (it’s all in the sauce guys!)
1/2 cup sour cream
1/3 cup mayonnaise
1/2 bunch of cilantro
1 spoonful of honey
Juice of a lime
Salt and pepper to taste
Mix in food processor or blender or whatever you have around.
Line soft shell tortilla with salsa, add shrimp and cover in sauce. You can add a little more cabbage at the top for some color if you want. But I just added more sauce. 🙂
