Peasant Bread

There are a few things I have tried to bake or make for a lot of years that I haven’t quite perfected. They either take way too much effort and time or the science and ratios are a little confusing to me. Bread is one of them. I like bread fluffy not dense. I finally found one of the easiest recipes….like ever. It only takes 6 ingredients.

Peasant Bread

  • 3 cups flour (I used all purpose, but you can use bread flour as well)
  • 1 1/2 teaspoons active dry yeast
  • 1 1/2 teaspoon sugar
  • 1 1/2 teaspoon salt
  • 1 1/2 cups lukewarm water (I had to use just a little bit more)
  • 1 tablespoon olive oil

Add the active dry yeast and sugar to the warm water and let set so the yeast can bloom for about 15 to 20 minutes. Mix together salt and flour. Add the water mixture to flour. Mix with spoon, until it makes a sticky ball. It will stick to your fingers but should make a ball. If it is feels dry, add a little bit of water. Cover and let rise for a couple hours until doubles in size. * It will be sticking to the sides of the bowl. Using a fork pull the dough from the sides of the bowl, fold over to form a ball. Pour the olive oil over the top of the ball and make sure the entire ball gets covered. It will be really slimy. In a buttered bread pan, cover and let rise until it crowns the top of the pan. Preheat oven to 375. Cook about 45 minutes until golden brown. Brush with butter. Take out of the pan and let rest on rack for about a half hour before cutting.

* I let my rise in the oven with the light on, it gives it just enough warmth.
