Summer time calls for salads. And since I love the last chicken salad I made, I thought I would try one more version. And it was just as delicious as the last one. And it all comes down to the dressing which is crazy easy. I’m trying really hard to find time to make things in the morning and eat later.
Cilantro Lime Salad Dressing and Marinade
Ingredients
1 jalapeño pepper, seeded and chopped
1 bunch of cilantro chopped
3 or garlic cloves minced
2-3 teaspoons of ginger
1/4 cup fresh lime juice
1/4 cup honey
1 tablespoon rice vinegar
salt to taste
pepper to taste
1/2 cup olive oil
Put all of these ingredients into a blender (whatever kind you have, I use a magic bullet and it makes it very thin, which is perfect) it should be very green.
Separate equally into two separate bowls.
In half of the mixture add one half packet of taco season. Cut up 3 chicken breasts into small pieces and marinate in the mixture for a couple of hours (or all day, whatever time you have.)
With the second half of the mixture, add one half cup of sour cream. And set aside.
Grill chicken until juices run clear. Add to whatever kind of salad you choose. And top with dressing.
