Pile It On the Brownies

Well, my favorite Irish Holiday is upon us.

Green food is abundant in the house. Most of it has been grown in the ground. But on occasion it’s good to have something to ward off the old sweet tooth. So I made a couple of things.

In my old age, I’ve come to really adore brownies. And you can make them in a million, pazillion different ways. So I spiced some up for St. Patty’s.

I of course started out with the best brownies on the planet. I use this one and use it often because I have the recipe memorized and I don’t have to get out any cook books and it’s just really really good. You can make them at chocolately as you want. Just add more cocoa.

Best Brownies on the Planet (with a little irish kick)

2 sticks melted butter

2 cups sugar

1/4 to 1/2 cup of cocoa (I always use the latter if not more to make them ultra chocolately)

4 eggs

2 cups flour

2 teaspoons vanilla

some nuts if desired (again, I don’t cook with nuts, so I never desire them)

AND THEN ADD:

9 crushed oreos and 1 cup of chopped Andes Mints (you can us more or less, what ever you want to do)

Mix these ingredients in order given and put into regular pan used for cooking brownies…..whatever size you desire. Bake at 350 degrees for 35-45 minutes, but keep testing with a toothpick to make sure they are done. Sometimes they take longer. Super easy. Super super good.

And for the Frosting:

OREO CREAM CHEESE FROSTING

1 cup powdered sugar

6 crushed oreos ( I threw them into the Magic Bullet, so they were powder)

1 stick of softened butter

1 package of cream cheese.  (The real stuff guys… it’s just so much better!!)

Mix it all together.

Top the brownies with extra Oreos and Andes.

 Now eat one… and get the rest out of the house, before they disappear!
