Watermelon Jicama Salad

I gotta say, this is going to fast become one of my favorite summer salads ever.

“Refreshing” was the word that was used at last nights gathering of Italians…..and a few  blue eyed, fair haired people.

I have mint taking over the entire side of my house, so I thought I should probably put it to good use.

It’s really very very easy.

Ingredients:

1 small seedless watermelon, chopped into small pieces

1 larger jicama sliced into smaller pieces

1 orange

1 lemon

1 tablespoon (or so) of fresh mint leaves.

salt

Directions:

Mix together the watermelon and the jicama. Zest the orange and the lemon over the top, then cut open and squeeze both the lemon and orange over the top of the mixture. Chop the mint leaves and add them to the mixture. Sprinkle with coarse salt.

Viola! The most refreshing summer salad ever!
