Oatmeal Streusel Zucchini Bread

So, as I’ve talked about earlier, I had Zucchini coming out my ears this year. I still have a giant pile of it sitting in my kitchen. The garden froze this past weekend,turned black, and is now a sad sad place. The squash sitting in my kitchen is a happy reminder of its better days.

Needless to say, we made a lot of bread this year. We’d throw is whatever was sitting around and to be honest I can’t really remember if I put yellow squash in this or not. They can pretty much be interchanged in things like this. I made the same kind of zucchini bread that’s I’ve always made, from my trusty Good Shepard Cookbook made by lovely christian women circa 1987. It’s a classic. And then…. I added a bunch of stuff  to make it a little more interesting. I love it when you add a bunch of stuff and it turns out awesome.  It’s a moist bread full of fantastic taste! We fought over who got to eat the last slice….

For the bread portion:

Ingredients:

3 beaten eggs

2 cups sugar

1 cup oil

2 cups grated zucchini

2 tsp vanilla

3 cups flour

1 tsp salt

1 tsp baking soda

1/2 tsp baking powder

3 tsp cinnamon

Mix eggs and sugar and oil, add flour which was sifted with other dry ingredients. Add zucchini and vanilla. Divide batte and pour into greased and floured pans. Cook at 350 for about an hour. When finished, brush butter on top to keep moist and sprinkle cinnamon and sugar as well. (don’t have to do that if you want)

Now to add some more awesomeness to the recipe.

You can make the above recipe just as is. Or before you put it into the oven, you can add this: (you can just sprinkle it on top)

1 cup oatmeal

1 cup brown sugar

1/4 cup butter (add this little by little so it’s no so much)

Some Cinnamon (I know, totally precise, right, just add as much as you want!)

Mix together until crumbly. Throw it on top of the  above two loaves and bake as the directions state. When it is finished cooking, brush butter on top to keep it moist. Some will sink into the bread. But ultimately…it kind of tastes like a giant cookie. It’s fall-tastic!
