Orange Avocado Salsa with Homemade Chips

I’m going through a little stage right now.

An avocado stage.

I don’t know what it is about them that I love so much, maybe it’s because they are my favorite color and that makes me happy.  (I mean look… I even have a green knife, which is seriously rad!) Maybe it’s because they taste slightly nutty, and I myself am a little nutty.  Maybe it’s because they are on the list of 30 super foods and any food on that list is probably worth eating.

Whatever it is. I love them.

I will admit though. I not the biggest fan of guacamole. Don’t get me wrong, if it’s there I’ll eat it and keep eating it, but my preference for eating an avocado is in chunks. It’s a texture thing.

I came up with the most AWESOME salsa recipe. I instantly fell in love and it is really really really really easy. I mean so easy my munkin could make it if I would let him touch a knife. (which I won’t)

 

Orange Avocado Salsa with Homemade Chips

Ingredients:

2 avocados cubed

1 orange

1/2 small onion finely chopped

tablespoon or more of lime juice

handful of cilantro, chopped

5 tortillas

Coarse salt

Pepper

Directions:

For chips: cut tortillas into wedges. Layout on a cookie sheet and spray or dab with a little water. Sprinkle with salt.  Zest the orange over the top of these as well and bake at 350 for about 10 minutes. I like mine a little soft, so I just keep checking them.

For salsa:  peel and cut off sides of the orange (so it looks like cube) and then mix together diced avocado, diced onion, cut orange. Add lime juice, cilantro and salt and pepper.

That’s it. And it is AMAZING!!! Fresh. and Healthy.

    Mmm…I love avocados and I’ve been eating a lot of them right now as well. I love your green knife. Is it a Pure Komachi? I have a purple one.

    Nope, not organic. I can never seem to find the time to get to whole foods. It wasn’t very ripe though, that’s why it was so green and purdy!
