Annual Apple Feast

We started a little tradition at my house when school starts….. the Apple Feast. Every thing we eat for dinner is apple related. We had it on the first day of school this year, as we weren’t ready to have it before hand. It was a beautiful night with no wind so we ate at the picnic table under the twinkle lights with a couple visitors from Thermopolis.  The dinner was nothing elaborate this year, but filling none the less. We had sparkling cider, Apple French Toast with Streusel, and an awesome Apple Salad. That was it, but that was plenty. My little man was ecstatic that he got to have breakfast for dinner as we don’t do that all that often, and this one was especially sweet, so he was in heaven. We celebrated a wonderful start to the year. He had “the greatest first day of school yet!!!!”  Which couldn’t make me happier!

 

Apple French Toast with Streusel

Ingredients:

10 pieces of Texas Toast

6 eggs

2 tsp cinnamon

2 tsp real mexican vanilla

1/4 cup milk

3 large apple chopped into tiny pieces

2 table spoons of butter

1 tablespoon of brown sugar

1 tsp cinnamon

1 tsp nutmeg

 

DIRECTIONS: Over medium heat melt butter and brown sugar. Add apples and cook until sauce thickens. Remove from stove and set aside.

Mix together eggs, vanilla, milk and cinnamon. Dip bread into mixture and then cook over medium heat until brown on each side.

 

FOR STREUSEL

1/4 cup softened butter

1 cup flour

1/2 cup brown sugar

2 tsp cinnamon

DIRECTIONS: Mix all ingredients with fork, until crumbly. Add more flour or butter if needed.

Layer toast, apple mixture and streusel. Top with whipped cream.

 

 

 

Sliced Apple Salad

INGREDIENTS:

3 large apples, julienned

2 stalks of celery, minced

1/2 cup dried cranberries

1/2 cup sour cream

1/2 cup mayonnaise

1 Tbs lemon juice (this can be more or less, just pour and taste as you go!)

Salt and pepper to taste

Mix all ingredients and refrigerate before serving.

And I will leave you with one of my favorite back to school songs…..the Charlie Brown Theme Song. I play it all the time right now. (I’m pretty sure this isn’t played by Beethoven, but it’s the only one I could find!)
