Pork Green Chili

So, about two years ago, I decided to timidly try some green chili at one of our local restaurants. I’m a very picky eater and it takes me a long time to decide to try things sometimes, but I will in my own time and on my own terms. It’s very mental I know, but it’s how I am. I’m sure if I were a child today someone would have decided that I had some sort of disorder, but the fact is, I am slowly growing out of it, and I am a perfectly normal adult. (OK, maybe not totally normal…) Anyway…. I fell in love with green chili. Especially green chili enchiladas. Especially cheese and onion enchiladas covered in green chili. So, this weekend I decided to try my hand at green chili. I had been given a couple recipes and I kind of put them together. It’s easy, and it’s an easy recipe to over complicate, but don’t do that. Keep it simple. Try to use fresh peppers if you can. It’s much better! Since it’s another rainy day, this would be perfect to make and it sure doesn’t take long! Oh, and by the way… I don’t eat the pork it in, but I know it needs that for flavor, I pick it out. Yeah, not totally normal yet, but getting there.
